I figured I'd basically tried this before and knew what to expect but covering it for an entire session turned out to reveal something I'd never actually noticed, my non-dominant eye had been competing for the sight picture way more than I realized and apparently my brain had just been quietly managing that competition in the background the whole time without me ever knowing it was happening.
The real surprise came after, once I uncovered it and went back to the correct technique on purpose. The sight picture was actually cleaner than it had been before I ever started the drill, which wasn't the outcome I expected going in. So the real lesson here isn't really about covering an eye at all, it's about actually learning what both eyes are doing, because apparently mine had been working something out on its own this whole time.
